Easter Bunny Butt Cupcakes

I’ve always loved themed foods for holidays and parties. I love it even more when I can make those themed foods or treats with my niece. She loves to be in the kitchen with me and insists on getting her little apron out and cooking every time she comes over. I’m always looking for new and fun treats to make with her. The treats need to be fun, but I also want them to be easy. I want to decorate with her, but I also want her to be able to decorate and create things on her own with a little help from me when she needs it.

I came up with these little bunny cupcakes when I was thinking of treats that she would have fun decorating! Adults will need to cut a few things up and bake the cupcakes in the oven (or supervise older children), but kids can get in on the decorating! These Easter cupcakes are fun and easy to decorate with just a few items from the cookie and candy section of your local Family Dollar.

Easter Bunny Butt Cupcakes

What you need:
1 box devils food chocoloate cake mix
1 1/4 cup water
1/2 cup oil 
3 eggs
White icing
Green food coloring
Red food coloring
Chocolate sandwich cookies
Large marshmallows
Clear or white gum drops
Jelly beans or other Easter candies
  for the top of cupcake (optional)

What to do:

Step 1: Preheat oven to 350F.

Step 2: Mix together the cake mix, water, oil and eggs. Portion the batter into a lined cupcake pan.

Step 3: Bake at 350F for 20 minutes. Remove from oven and let cool.

Step 4: To make the icing fluffier and to double the amount, scoop icing from can into the bowl of an electric mix. Mix on high for 3-5 minutes. This will also make the icing a lot whiter.

Step 5: Divide the icing into two bowls.  Tint one bowl of icing with the green food coloring.

Step 6: Scoop out one spoonful of white icing into a small bowl and tint pink with the red food coloring.

Step 7: Crush a few of the sandwich cookies in a bowl. *This will be the “dirt” for the cupcakes.

Step 8: Cut the marshmallows in half for the “bunny butts.” Cut a few of the marshmallow halves in half to form the bunny feet. To make the feet oval shaped, roll the marshmallow in between the palms of your hands for a few seconds.

Step 9: Cut Gum Drops in half as well.

Step 10: If you want filling inside the cupcake, use a small sharp knife to cut a well into the center of a cooled cupcake.  Fill with white icing and place cake back on top of the cupcake.

Step 11: Frost the top of the cupcake with the green icing.

Step 12: Sprinkle some of the crushed chocolate sandwich cookies onto a small area of the cupcake to create the rabbit hole.  Press half of a marshmallow, sticky side down, onto the cupcake beside the rabbit hole.  Place the feet onto the marshmallow and the gumdrop for the bunny tail. Use white icing for “glue.”

Step 13: Use a toothpick and draw little paw prints onto the bottoms of the bunny feet with the pink icing.

Step 14: Add jelly beans for “Easter Eggs.”
