I love to cook. I love fixing new recipes and creating wonderful meals for my family; but no matter how much I love being in the kitchen, sometimes I’m just strapped for time. Chicken and Vegetable Fried Rice is so easyto make and it only takes about 30 minutes to create.
Chicken & Vegetable Fried Rice
|What you need:|
|2 bags of “Boil-in-Bag” white rice|
|4-5 tablespoons soy sauce|
|2 cans of white premium chunk chicken breast|
|1/2 teaspoon seasoning salt|
|2-3 tablespoons butter|
|2 cans (4 oz) mushrooms|
|1 can whole kernel sweet corn|
|1 can sweet peas|
|Salt and Pepper to taste|
What to do:
Step 1: Fill a large stock pot with water. Add bags of “Boil-in-Bag” white rice. Bring water to a boil and boil for 8 minutes.
Step 2: While the rice is cooking, heat a medium skillet on medium high heat. Add chicken. Sprinkle chicken with seasoning salt.
Step 3: Heat chicken for 3-4 minutes, breaking up chicken chunks with a spoon. Once heated throughout, turn heat off and set aside.
Step 4: While the chicken is heating and rice is cooking, open cans of corn, peas and mushrooms. Drain cans.
Step 5: Once rice is done cooking, remove from water. Drain the rice and open the bags.
Step 6: In a large skillet or wok, melt butter on medium to high heat. Pour drained rice to skillet. Add soy sauce. Mix with rice and heat while stirring for 3-4 minutes.
Step 7: Add corn, peas and mushrooms. Stir and cook for 3-4 minutes.
Step 8: Push rice mixture to the side, crack one egg into the skillet. Cook/Scramble the egg. Mix into the rice. Push rice mixture to the side again. Crack the second egg into the open space. Cook/Scramble the second egg. Mix cooked egg into rice mixture.
Step 9: Add chicken. Season with salt and pepper. Mix well and cook until heated throughout.
Yields: 6 servings
